Inspired by the oaked Sauvignon Blanc wines of Bordeaux and Pouilly-Fumé, Hidden Bench uses estate fruit from the Rosomel Vineyard i n Beamsville Bench and ferments the wine using indigenous yeasts and ages it in oak. This 2024 shows gooseberry, tangerine, pear, tropical fruit, savoury herbs, and a flinty mineral quality. Give it a try with seafood cooked in white wine.
