The rice for Junmai Ginjo is polished to a higher degree than for Junmai, producing a more delicate, complex, lighter experience. The Hanagaki Junmai Ginjo Sake offers impressive, layered notes of spice, banana, mint, nuts and pear. Crisp and fresh with a fine acidity, it will be a great match for salmon or carrot lox.
